An all-time kid favorite! Who does not like Mac & Cheese?
As much as my daughter loved it when she was little and honestly still does – maybe today more as a comfort food – I always had a problem with Mac & Cheese because is there anything that is less nutritious?! If you agree, then this is a win and you will love this recipe. It gives you all the benefits of comfort food and all the nutrients and wellness of the variety of vegetables.

Ingredients:
2 large organic sweet potatoes, peeled and cubed
1 head organic cauliflower, chopped
1 cup organic carrots, peeled and chopped
1 1/4 cup frozen petite green peas
1 tsp onion powder
1 tsp garlic powder
2 tsp paprika
1 tsp salt
2 tsp black pepper
2 tbsp nutritional yeast
1 tbsp Italian seasoning
2/3 cup plant milk, (I used cashew)
2 cups of vegetable cooking water set aside
16 oz of your favorite pasta (I used fusilli)
1/2 cup of breadcrumbs
Instructions:
Boil sweet potatoes, carrots, and cauliflower until tender. Drain and set aside water. Meanwhile, cook your choice of pasta according to the instructions on the package. Drain the pasta water and add the pasta to an oven safe dish.
Mix all ingredients except for the pasta and the peas in a food processor. You can do it a bit at a time, tasting it while you go to make sure you get the flavor and texture that best works for you. I added a cup of veggies and half of the spices and liquid and kept giving my daughter tastes until she said it was perfect. She was actually the one who suggested the Italian seasoning.
Once you have the taste of your sauce exactly right, mix it in the dish with the pasta and add the peas. Sprinkle the breadcrumbs on top and bake for 20 minutes at 350 degrees Fahrenheit.
Note:
By the way, these ingredients made approximately eight cups of sauce. I used four cups with the pasta and froze the other four cups. I love having easy homemade meals in the freezer so I am always happy to have extra sauce, but you can cut down the ingredients if that does not work for you.
