Easy Healthy Vegan Mac and Cheese

As much as my daughter loved mac and cheese when she was little – and honestly still does today, mostly as the ultimate comfort food – I always had a bit of a love-hate relationship with it. Is there any classic dish out there that feels less inherently nutritious?

Think about why kids are so obsessed with mac and cheese: it’s warm, creamy, mild in flavor, and delightfully cheesy. Pure comfort in a bowl! But when you break down what traditional boxed or homemade mac and cheese actually offers, it is almost entirely refined white pasta and heavy dairy – that’s pretty much it.

While it satisfies picky eaters in the moment, serving standard mac and cheese doesn’t translate into anything that helps kids develop healthy eating habits, nor does it deliver the essential nutrients, vitamins, and fiber their growing bodies need daily.

It gives you and your family all the cozy, creamy benefits of classic comfort food, but packs in all the wellness and nutrition of a wide variety of whole vegetables.

Why This Veggie-Packed Mac & Cheese Works

Traditional cheese sauces rely on saturated fats and heavy dairy to achieve that rich, coating texture. In this recipe, we swap out milk and processed cheese for a velvety blend of organic sweet potatoes, carrots, and cauliflower, but still get all the benefits of comfort food.

  • Sweet Potatoes: Provide natural sweetness, a gorgeous golden-orange color, and a huge dose of vitamin A and beta-carotene.
  • Cauliflower: Adds an incredibly smooth, creamy base without altering the flavor profile.
  • Carrots: Boost the vibrant color while contributing extra fiber and antioxidants.
  • Nutritional Yeast: Delivers that savory, “cheesy” umami flavor along with B-complex vitamins, keeping the recipe 100% dairy-free.

Ingredients

Vegetable & Sauce Base:

  • 2 large organic sweet potatoes, peeled and cubed
  • 1 head organic cauliflower, chopped
  • 1 cup organic carrots, peeled and chopped
  • 2/3 cup plant milk (I used cashew milk for extra creaminess)
  • 2 cups vegetable cooking water (set aside after boiling)
  • 2 tbsp nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tbsp Italian seasoning

Pasta & Toppings:

  • 16 oz of your favorite pasta (I used fusilli)
  • 1 1/4 cup frozen petite green peas
  • 1/2 cup breadcrumbs

Step-by-Step Instructions

Step 1: Cook the Veggies and Pasta

Place the peeled sweet potatoes, carrots, and cauliflower into a large pot of boiling water. Boil until all the vegetables are fork-tender. Drain the cooked vegetables, making sure to reserve at least 2 cups of the nutrient-rich cooking water for the sauce.

Meanwhile, cook your choice of pasta in a separate pot according to the package instructions. Drain the pasta water and transfer the cooked noodles into a large, oven-safe baking dish.

Step 2: Blend the Cheesy Sauce

Transfer the cooked vegetables into a food processor or high-speed blender along with the plant milk, spices, nutritional yeast, and a splash of the reserved cooking water.

Mix all sauce ingredients until completely smooth and velvety. You can do this a bit at a time, tasting as you go to adjust the flavor and texture to your family’s liking. When I made this, I added a cup of veggies and half of the spices and liquid, then kept giving my daughter tastes until she declared it perfect!

She was actually the one who suggested adding the Italian seasoning – so get your own home cooks involved in the process. It might help to elevate the flavor profile or at least land on a flavor that reminds your little one of their favorite restaurant food.

Step 3: Combine and Bake

Once your sauce tastes exactly right, pour 4 cups of the warm veggie sauce directly over the pasta in your baking dish. Stir in the frozen petite green peas so they are evenly distributed throughout the dish. You can leave the peas out, but a lot of my recipes include peas because we just love them so much – actually anything that is a fresh green is on my list to get added in.

Sprinkle the breadcrumbs evenly over the top for a crunchy baked topping. Bake in a preheated oven at 350°F (175°C) for 20 minutes, until the top is golden and bubbling.

Freezer-Friendly Meal Prep Tip

By the way, these sauce ingredients yield approximately eight cups of creamy sauce. I only used four cups for this 16 oz pasta bake and froze the remaining four cups in an airtight container for later!

I love having easy, homemade veggie sauces ready in the freezer for busy weeknights when I don’t have time to chop and boil vegetables from scratch. If you don’t want extra sauce on hand, you can easily cut the sauce ingredients in half.
